Ingredients/Components
- water - 6 c
- cloves garlic, minced - 3 item
- can tomato sauce - 1 oz
- olive oil - 2 Tbsp
- medium onion, chopped - 1 item
- dried basil - 1 tsp
- dried parsley - 2 Tbsp
- 1/2 lb
- can kidney beans, drained and rinsed - 1 oz
- cabbage, finely shredded - 1/2 c
- Parmesan cheese for garnish - 1 item
- large leeks white and 1 inch of green part - 2 item
- carrots, chopped 2 large
- large, unpeeled potato, diced - 1 item
- can Italian-style stewed tomatoes not drained - 1 oz
- unpared zucchini, sliced thin 1/2 lb - 2 c
- small pasta, cooked more if fresh is used - 1 c
How to make minestrone:
Boil water. Heat oil in skillet and add onion, garlic, leeks, carrots and green beans. Saute vegetables over low heat for about 6 minutes. Add sauteed vegetables to boiling water. Also, add potatoes, tomato sauce and stewed tomatoes. Bring to a boil.Recipe categories: Pasta, Beans, Chickpeas/garbanzos.
