Ingredients/Components

  • quick cooking oats - 1/4 c
  • garlic powder - 1/4 tsp
  • grated Parmesan cheese - 1/4 c
  • chopped fresh parsley - 1/2 c
  • chopped celery - 1 c
  • cans chicken broth - 3 1/2
  • chopped onions - 1 c
  • chopped carrots - 1 c
  • can tomato paste - 1 oz
  • dried basil leaves - 1 tsp
  • garlic cloves, minced - 2 item
  • dried thyme leaves - 1 tsp
  • dried Italian seasoning - 1/4 tsp
  • can tomatoes undrained, cut up - 1 oz
  • chopped, peeled potatoes - 1 c
  • egg whites or 1 whole egg - 2 item
  • uncooked rotini spiral macaroni - 1 c
  • recipe Turkey Meatballs recipe follows - 1/2 item
  • Heat over medium-high heat until hot

How to make minestrone meatball soup:

Spray Dutch oven or large saucepan with nonstick cooking spray. Heat over medium-high heat until hot. Add onions, celery and garlic. Cook and stir until crisp-tender. Stir in remaining ingredients, except rotini and meatballs. Bring to a boil; reduce heat. Cover; simmer 30 minutes. Stir in rotini and meatballs. Simmer, uncovered, an additional 10 to 12 minutes or until vegetables and rotini are tender. If desired, serve with Parmesan cheese. Makes 8 (1 1/2-cup) servings.Turkey Meatballs:1 lb. ground turkey1/4 c. quick cooking oats1/4 c. grated Parmesan cheese1/4 tsp. dried Italian seasoning1/4 tsp. garlic powder2 egg whites or 1 whole egg Spray 15 x 10 x 2-inch baking pan with nonstick cooking spray. In medium bowl, combine all ingredients; shape into 3/4-inch balls. Place meatballs in pan. Bake at 350° for 20 minutes or until no longer pink. Remove from pan. Makes 6 dozen.
