Mincemeat
Ingredients/Components
- salt - 1/4 tsp
- raisins
- light brown sugar
- light molasses - 3 Tbsp
- ground cloves - 3/4 tsp
- ground cinnamon - 3/4 tsp
- ground nutmeg - 1/4 tsp
- ground allspice - 1/4 tsp
- brandy - 1 c
- coarsely chopped apples - 3 c
- ground mace - 3/4 tsp
- sweet cider - 2 c
- beef suet - 1/2 lb
- dried currants - 2 c
- chopped citron - 1/4 lb
- boiled lean beef - 1 lb
How to make mincemeat:
Put beef suet and raisins through food grinder, using coarse blade. Put citron and apples through grinder. Combine all in a heavy kettle and add remaining ingredients in order, except brandy. Bring to boil, stirring constantly. Reduce heat and simmer 1 hour, stirring frequently. The mixture will scorch easily. Remove from heat and stir in brandy. Ladle into pint jars, leaving 1/2-inch headroom and process at 10 pounds pressure for 20 minutes or in a boiling water bath for 1 hour and 30 minutes. Makes 5 pints.Note: Please follow directions for your pressure cooker. This mixture can also be frozen.
