Microwave rice pudding
Ingredients/Components
- sugar - 3/4 c
- milk
- vanilla extract - 1 tsp
- salt - 1/4 tsp
- butter - 2 Tbsp
- cornstarch - 2 Tbsp
- egg yolks - 2 item
- cooked rice - 2 c
How to make microwave rice pudding:
In 1-quart casserole, blend together sugar, cornstarch and salt. Gradually stir in milk, mixing well. Microwave on High 5 to 7 minutes. Stir every 3 minutes until mixture is smooth, thickened and clear. Stir small amount of hot pudding into egg yolks. Return egg mixture to hot pudding, mixing well. Microwave 1 to 3 minutes. Add butter and vanilla. Stir. Add rice to pudding. Stir and serve. (Raisins may be added.)Recipe categories: Desserts, Puddings and mousses, Rice.
