- cooking oil - 2 Tbsp
- pepper to taste - 1 item
- minced onion - 2 Tbsp
- eggs, slightly beaten - 6 item
- garlic clove, chopped fine - 1/2 item
- small green pepper, diced fine - 1 item
- sieved, cooked or canned tomatoes - 1/3 c
How to make mexican scrambled eggs:
In large skillet, saut?© onion, garlic, green pepper until tender in oil. Add tomatoes, water, salt and pepper to taste. Cook 3 minutes. Add eggs and cook over slow heat, stirring occasionally, until thickened.Recipe categories: Egg, Breakfast, Beans.
