Ingredients/Components

  • flour
  • butter - 3 Tbsp
  • melted butter - 2 Tbsp
  • salt and pepper to taste - 1 item
  • can sliced mushrooms - 4 oz
  • cups milk - 2 item
  • paprika for garnish - 1 item
  • eggs beaten - 12 item
  • cup melted butter - 1/4 item
  • cup shredded cheddar cheese medium or sharp - 1 item
  • cup chopped cooked ham - 1 item
  • cup green onion tops - 1/4 item
  • 1/4 cup soft bread crumbs 4 slices of bread - 2 item

How to make scrambled egg casserole:

Make cheese sauce: Blend butter and flour in saucepan. Cook for 1 minute. Add milk gradually. Cook until thickened. Add salt, pepper and cheese. Set aside.

Make egg mixture: Saut ham and green onions with butter in large skillet. Add beaten eggs. Cook over medium heat until eggs are set, stirring frequently. Stir in mushrooms and cheese sauce.

Spoon into greased 9 X 13 inch pan. Toss bread cubes in butter to coat lightly. Top egg mixture with bread cubes. Sprinkle with paprika. Cover with aluminum foil and refrigerate overnight (or you may bake right away).

Bake uncovered at 350 degrees for 30 minutes.
