Ingredients/Components
- eggs - 8 item
- milk - 2 Tbsp
- butter or margarine - 3 Tbsp
- chopped ham - 1/2 c
- grated Cheddar cheese - 1/2 c
- large tomato, peeled and chopped - 1 item
- chopped hot pepper - 1 Tbsp
How to make mexican scrambled eggs:
Beat eggs in mixing bowl with milk. Add tomato and pepper and stir well. Melt butter over low heat in skillet; saute ham 3 minutes. Pour in egg mixture; cook, stirring frequently with spatula, until set. Salt and pepper to taste. Sprinkle cheese on top of cooked eggs.Recipe categories: Egg, Breakfast, Beans.
