Ingredients/Components
- pkg - 1 oz
- oil - 1 Tbsp
- chicken broth - 1 c
- small onion, chopped - 1 item
- small green pepper, diced - 1 item
- mild salsa - 1 c
- original Minute rice
- shredded Cheddar cheese optional - 1/4 c
How to make mexican rice:
Cook and stir pepper and onion in hot oil in saucepan until tender, but not browned. Add corn, salsa and broth. Bring to boil. Stir in rice. Cover. Remove from heat. Let stand 5 minutes. Add cheese and fluff with fork.Recipe categories: Side dish, Cheese, Rice.
