Ingredients/Components
- shredded Cheddar cheese
- shredded Monterey cheese
- large whole chicken breast skinless, boneless - 1 item
- bag tortilla chips no/low salt - 1 (11
- large jar mild garden style salsa Ortega/Old El Paso brand - 1 item
How to make mexican lasagna:
Cook the chicken until it falls apart easily. Drain any water or excess liquids from chicken. Add the salsa to the chicken and simmer about 3 to 5 minutes.Use a 13 x 9-inch pan. Crush the tortilla chips. Layer the bottom of the pan with 1/2 bag of chips. Add the cheeses (mix together the Cheddar and Monterey) on top of the chips. Layer the salsa-chicken on top of that. Continue to layer chips, cheese and chicken until ingredients are gone. Top with cheese.
Bake at 350° for 20 minutes or until hot or cheese is browned. Serve hot with sour cream.
