Ingredients/Components

  • eggs - 2 item
  • milk - 1 c
  • salt - 1 tsp
  • soda - 1/2 tsp
  • cheese, grated - 1/2 lb
  • corn meal - 1 c
  • can cream style corn - 1 item
  • large onion, chopped fine - 1 item
  • jalapeno peppers - 3 item
  • ground meat or sausage - 1 lb

How to make mexican cornbread:

Fry meat about 10 minutes and drain. In separate bowl, mix corn meal, salt, soda, eggs, and milk; add corn and mix well. Pour 1/2 of the batter into a pan; add meat, onion, pepper, and cheese; next add the remaining batter over the meat mixture. Bake 1 hour at 350°.
