Mexican cornbread
Ingredients/Components
- milk - 1 c
- salt - 3/4 tsp
- soda - 1/2 tsp
- eggs, well beaten - 2 item
- ground meat - 1/2 lb
- yellow cornmeal - 1 c
- can cream-style corn - 1 item
- onion, chopped fine - 1 item
- Cheddar cheese, grated - 1/2 lb
- bacon grease - 1/4 c
- bell pepper, chopped fine - 1/4 item
- jalapeno peppers optional - 2 item
How to make mexican cornbread:
Mix all ingredients together except cheese and ground meat. Brown ground meat. Drain well. Pour 1/2 corn bread mixture in skillet. Add ground meat on top and spread evenly. Sprinkle cheese over ground meat. Pour remaining corn bread mixture over cheese. Bake for 45 minutes at 350° in a 10-inch skillet. Serve with green salad.
