Mexican cornbread
Ingredients/Components
- eggs - 3 item
- salt - 1/2 tsp
- oil - 1/3 c
- grated Cheddar cheese - 1/2 c
- green pepper, chopped - 1/2 item
- can creamed corn - 1 oz
- large jalapeno pepper, chopped - 1 item
- self-rising meal
- milk sweet or butter - 1 c
How to make mexican cornbread:
Mix all ingredients except cheese. Pour half of batter into greased and heated skillet, then pour the cheese into the skillet. Cover with the rest of the batter. Bake at 375° for about 45 minutes or until brown. I use an 8-inch square pan and do not preheat.Recipe categories: Breads, Quick breads, North american.
