Ingredients/Components

  • oil - 2/3 c
  • buttermilk - 1 c
  • eggs, beaten - 3 item
  • shredded Cheddar cheese - 8 oz
  • medium onion, chopped fine - 1 item
  • salt to taste - 1 item
  • self-rising cornmeal
  • small can cream-style corn - 1 item
  • medium sweet pepper, chopped fine - 1 item
  • crushed hot pepper to taste - 1 item

How to make mexican corn bread:

Grease and flour a large skillet. Mix all together except cheese. Pour half of batter in skillet, then sprinkle cheese over top. Pour rest of batter in. Bake at 400° for 40 to 45 minutes or until golden brown.
