Ingredients/Components
- oil - 2/3 c
- buttermilk - 1 c
- eggs, beaten - 3 item
- shredded Cheddar cheese - 8 oz
- medium onion, chopped fine - 1 item
- salt to taste - 1 item
- self-rising cornmeal
- small can cream-style corn - 1 item
- medium sweet pepper, chopped fine - 1 item
- crushed hot pepper to taste - 1 item
How to make mexican corn bread:
Grease and flour a large skillet. Mix all together except cheese. Pour half of batter in skillet, then sprinkle cheese over top. Pour rest of batter in. Bake at 400° for 40 to 45 minutes or until golden brown.Recipe categories: < 4 hours, Breads, Mexican.
