Mexican cornbread
Ingredients/Components
- oil - 1/2 c
- buttermilk - 1 c
- eggs, beaten - 3 item
- large onion, chopped - 1 item
- grated sharp Cheddar cheese - 1 c
- cream-style corn - 1 c
- self-rising cornmeal
- large green pepper, finely chopped - 1/2 item
- small hot red pepper, chopped - 1 item
How to make mexican cornbread:
Combine all ingredients except cheese and pour half of batter in 8-inch square pan (greased). Cover with cheese. Pour remaining batter over cheese. Bake in preheated oven at 400° for 35 to 45 minutes or until golden brown. (Use more cheese, if desired.)Recipe categories: Breads, Quick breads, North american.
