  • grated medium Cheddar cheese - 1 item
  • large can evaporated milk - 1 item
  • small can mild green chilies, chopped - 1 oz
  • chicken breasts, cubed or 1 fryer, cooked and cubed - 4 item
  • original Fritos corn chips - 1 pkg
  • Sauce:1 can cream of chicken and 1 can cream of mushroom soup or 2 cans cream of chicken/mushroom soup
  • soup-size can Ro-Tel tomatoes or Mexican tomatoes - 1 item

How to make mexican chicken casserole:

Sauce:1 can cream of chicken and 1 can cream of mushroom soup or 2 cans cream of chicken/mushroom soup1 soup-size can Ro-Tel tomatoes or Mexican tomatoes1 medium green bell pepper, chopped1 medium onion, chopped1 (4 oz.) small can mild green chilies, chopped1 large can evaporated milk salt and pepper to taste Heat sauce until hot. Layer corn chips in 9 x 13-inch pan. Add layer of cubed chicken. Pour sauce over all. Cover with grated medium Cheddar cheese. Bake at 350° about 30 minutes or until center bubbles and cheese is melted.
