- chicken broth
- salsa - 1 c
- Minute rice
- shredded cheese - 1/2 c
- boneless, skinless chicken breasts, cubed - 1 lb
- each: small onion and green pepper, chopped - 1 item
How to make mexican chicken and rice:
Heat oil. Add chicken, onion and green pepper; cook and stir until chicken is cooked through. Add corn, broth and salsa. Bring to a boil. Stir in rice; cover and remove from heat. Let stand 5 minutes; sprinkle with cheese until melts.Recipe categories: < 60 mins, North american, Mexican.
