Ingredients/Components
- oil - 1 Tbsp
- chicken broth - 1 c
- shredded Cheddar cheese - 1/2 c
- small green pepper - 1 item
- small onion - 1 item
- cooked rice - 3 c
- medium salsa - 1 c
- cubed chicken - 2 c
- sweet corn - 10 oz
How to make mexican chicken and rice:
Saute the onion and green pepper in the oil. Combine all of the above and put in buttered, covered casserole dish. Bake at 350° until heated through. May top with additional cheese.Recipe categories: < 60 mins, North american, Mexican.
