Ingredients/Components

  • water - 1/2 c
  • dry mustard - 1/2 tsp
  • diced green pepper - 1/2 c
  • chopped onion - 1/3 c
  • chili powder - 1 Tbsp
  • can tomato sauce - 1 oz
  • ground beef - 1 lb
  • shredded Cheddar cheese - 1 c
  • can tomato paste - 1 oz
  • Minute rice uncooked - 1 c
  • cans corn - 2 item

How to make mexican casserole:

Brown beef, onion and green pepper in skillet; drain. Add spices, corn, tomato sauce, tomato paste and water. Cover; bring to boil, stirring occasionally. Add rice. Reduce heat; cover and simmer for 10 minutes. Stir, then add shredded cheese. Turn off; heat and cover for 5 minutes.
