- nonfat cottage cheese - 16 oz
- elbow macaroni - 16 oz
- Healthy Choice Mozzarella - 16 oz
- Healthy Choice Cheddar - 16 oz
How to make low-fat macaroni and cheese:
Boil macaroni to the "al dente" stage (slightly firm); drain in colander. While macaroni is still hot, add cottage cheese; mix well. Add Mozzarella; mix well. Add 3/4 of Cheddar; mix lightly, spreading the rest of the Cheddar over the top. Garnish with a tomato slice and green pepper, if desired. This can be served immediately or reheated later in the oven at 350°. If you want the top brown, use the preheat setting.
