Ingredients/Components

  • diced onion
  • diced green pepper - 2 c
  • dried black-eyed peas - 1 lb
  • finely chopped garlic - 1 Tbsp
  • finely chopped green onion - 1 c
  • Italian salad dressing - 2 c
  • jar pimento, diced and drained - 3 oz
  • finely chopped jalapeno pepper - 1/2 c
  • salt and hot pepper sauce to taste - 1 item

How to make lone star caviar:

Cover peas with water and soak at least 6 hours. Drain well. Put in saucepan and add water to cover. Bring to a boil, reduce heat and allow to simmer until tender (about 45 minutes). Drain well. Blend in dressing and let cool. Add remaining ingredients and mix well. Makes 7 1/2 cups.
