Lone star caviar
Ingredients/Components
- diced onion
- diced green pepper - 2 c
- dried black-eyed peas - 1 lb
- finely chopped garlic - 1 Tbsp
- finely chopped green onion - 1 c
- Italian salad dressing - 2 c
- jar pimento, diced and drained - 3 oz
- finely chopped jalapeno pepper - 1/2 c
- salt and hot pepper sauce to taste - 1 item
How to make lone star caviar:
Cover peas with water and soak at least 6 hours. Drain well. Put in saucepan and add water to cover. Bring to a boil, reduce heat and allow to simmer until tender (about 45 minutes). Drain well. Blend in dressing and let cool. Add remaining ingredients and mix well. Makes 7 1/2 cups.Recipe categories: Appetizers, Side dish, Winter.
