Ingredients/Components
- salt - 2 Tbsp
- water - 2 gal
- vinegar - 3 qt
- cucumbers - 7 lb
- lime - 3 c
- mixed pickling spices - 2 Tbsp
- or 9 c - 4 lb
How to make lime pickles:
Wash cucumbers and peel large ones. Cut in 1/4-inch pieces. Slice and soak 24 hours in lime water. Remove and soak in clear water 2 hours.Make mixture of vinegar, sugar, salt and spice. Cook cucumbers in this mixture about 2 hours or 1 1/2 hours on simmer. Pack cucumbers in jars, pour liquid over cucumbers and seal.
