Lentil soup
Ingredients/Components
- chopped onion - 3/4 c
- chopped celery - 3/4 c
- clove garlic, minced - 1 item
- margarine - 1 Tbsp
- water - 6 c
- can tomatoes - 1 oz
- dry lentils - 3/4 c
- pearl barley - 3/4 c
- beef bouillon cubes - 6 item
- dried oregano - 1/2 tsp
- pepper - 1/4 tsp
- thinly sliced carrots - 1 c
- shredded Swiss cheese - 1 c
How to make lentil soup:
In 4-quart pan, cook onion, celery and garlic in margarine until tender. Add water, undrained tomatoes, lentils, barley, bouillon and spices. Bring to boil; reduce heat. Cover and simmer 45 minutes.
