  • sugar - 1 c
  • salt - 1/8 tsp
  • butter - 2 Tbsp
  • lemon juice - 5 Tbsp
  • cake flour - 1/4 c
  • grated lemon peel - 1 Tbsp
  • scalded milk - 1 c
  • well beaten egg yolks - 2 item
  • egg whites, beaten until peaks form - 2 item

How to make lemon sponge pudding:

Mix sugar, flour and salt. Add butter, juice, lemon peel and egg yolks, then scalded milk. Fold in egg whites. Set in a 1 1/2-quart buttered pan in hot water. Bake at 325° for 1 hour. Serves 4 to 6.
