  • sugar - 1 c
  • salt - 1/2 tsp
  • butter - 1 Tbsp
  • cornstarch - 3 Tbsp
  • water - 2 c
  • all-purpose flour - 1/4 c
  • lemon juice - 1/4 c
  • egg yolks, beaten - 3 item

How to make lemon pie:

Combine sugar, cornstarch, flour, salt and water in double boiler. Dissolve all cornstarch and flour. Add beaten eggs, slowly stirring in. Also add butter and lemon juice, stirring all the time. When thick, pour into pie shell.

Beat 3 egg whites (room temperature) until stiff. Slowly add 3 1/2 tablespoons sugar, pinch of salt and 1 teaspoon of vanilla. Bake pie at 325° until set.
