Ingredients/Components

  • sugar - 1 c
  • salt - 1/4 tsp
  • flour - 1/4 c
  • cornstarch - 3 Tbsp
  • eggs, separated - 3 item
  • water - 2 c
  • margarine - 1 Tbsp
  • lemon juice - 1/4 c
  • lemon rind - 1 tsp

How to make lemon pie:

Combine sugar, salt, flour and cornstarch in double boiler; stir in water. Cook over medium heat until mixture becomes thick and clear. Add a little hot mixture to beaten egg yolks. Return to mixture and cook a few minutes more. Remove from heat and blend in lemon juice, rind and butter. Pour into a baked pie shell. Cool slightly.

Topping: Beat egg whites and 6 tablespoons of sugar until stiff. Turn on oven to 500° until very hot. Turn off just before you put pie in; browns quickly.
