Ingredients/Components
- sugar
- cornstarch - 4 Tbsp
- salt - 1/8 tsp
- boiling water
- lemon juice - 1/4 c
- rind of 1 lemon, grated
- butter - 1 Tbsp
- egg yolks - 2 item
- baked pie shell - 1 item
- Meringue:2 egg whites
- vanilla - 1/4 tsp
How to make lemon pie:
Meringue:2 egg whites1/8 tsp. salt2 Tbsp. sugar1/4 tsp. vanilla In saucepan, blend sugar, cornstarch and salt. Add boiling water; stir until smooth. Add lemon juice, lemon rind and butter. Beat 2 egg yolks; add 2 tablespoons of mixture. Mix well and after the egg yolk mixture is hot, add it back to the remaining hot mixture in saucepan. Cook until thick. Cool, covered, before putting into crust. Pour into crust and cover with meringue. Bake until meringue is browned (325° or as desired).Recipe categories: Desserts, Pie, Pies and tarts.
