Lemon ice cream pie
Ingredients/Components
- sugar - 1/2 c
- eggs - 3 item
- pinch of salt - 1 item
- lemon juice - 4 Tbsp
- whipping cream, whipped - 1 c
- vanilla wafers, crushed - 2 c
How to make lemon ice cream pie:
Beat egg yolks and 1 egg white together. Add salt, sugar and lemon juice. Cook in double boiler until thick (cool). Beat and add the two remaining egg whites. Whip the cream and add. Place half of the vanilla wafers in refrigerator tray. Add lemon mixture and top with remaining vanilla wafers. Freeze.
