Lemon chicken
Ingredients/Components
- butter - 1/3 c
- unbleached flour
- salt and pepper - 1 item
- olive oil - 2 Tbsp
- finely chopped parsley - 4 Tbsp
- juice from 1/2 lemon
- whole chicken breasts, boned, skinned and halved - 3 item
How to make lemon chicken:
Sauce:4 Tbsp. butter4 Tbsp. finely chopped parsley juice from 1/2 lemon Wash and dry chicken breasts. Pound them flat with a mallet. Melt the butter and oil in a large skillet. Put the flour in a plastic bag and drop the breasts in to coat. Regulate the heat to moderately high and put the chicken in the skillet. Cook approximately 3 minutes on each side. When they are done, salt and pepper them and put them on an ovenproof dish into a 250° oven to keep warm while you make the sauce.Sauce: Add butter to the chicken skillet and melt, scraping up brown bits in pan. Remove from heat and add the parsley and lemon juice. Pour hot sauce over breasts and serve.
