- dry white wine - 1/2 c

- head garlic, peeled and blanched in boiling water for 10 minutes - 1 item
How to make chicken with forty cloves of garlic:
In a large, deep skillet over medium-high heat, warm 1 tablespoon of the butter and the oil until hot. Add the chicken; season with salt and pepper. Brown it on all sides. Distribute the garlic cloves around the chicken. Cover and cook the chicken over medium-low heat for 30 to 35 minutes, or until juices run clear.Transfer the chicken and garlic to a platter and keep warm. Skim and discard the fat from the pan. Add wine and reduce by half over high heat. Add the stock and reduce. Remove from heat and stir in remaining 4 tablespoons butter. Pour sauce over chicken.
