King ranch chicken casserole
Ingredients/Components
- can cream of chicken soup - 1 item
- can cream of mushroom soup - 1 item
- grated Cheddar cheese
- chicken - 3 lb
- large onion, chopped - 1 item
- can Ro-Tel tomatoes and green chilies - 1 oz
- tortillas, cut in 1-inch strips - 1 pkg
- chicken broth from cooked chicken or soup can
How to make king ranch chicken casserole:
Combine broth, soups and tomatoes, set aside. In large oiled casserole layer half of tortillas, half of chicken, half of onion and one third of cheese. Pour one-half of liquid over layers. Repeat layers of tortillas, chicken and onion; then pour remaining liquid mixture over. Top with remaining cheese. Bake at 375° for 1 hour. Better when reheated.Note: Put small amount of liquid mixture in bottom of casserole to prevent tortillas from sticking.
