Ingredients/Components

  • salt - 3 Tbsp
  • brown sugar - 2 Tbsp
  • paprika - 1 Tbsp
  • garlic powder - 1 tsp
  • black pepper - 1 tsp
  • cayenne pepper - 1/4 tsp
  • dried mustard - 1/2 tsp
  • chili pepper - 2 tsp
  • powdered cumin - 1/2 tsp
  • lean meat, cut thin - 6 lb

How to make jerky:

Combine all ingredients (except meat) into small grinder or food processor. Grind to release oils. Put spice into salt shaker. Cut away all fat and gristle from meat. Pound with mallet; sprinkle seasoning into meat as you go. Heat oven to 175°
