Italian zucchini pie
Ingredients/Components
- salt - 1/2 tsp
- margarine - 1/4 1/2
- beaten eggs - 2 item
- pepper - 1/2 tsp
- chopped onion - 1 c
- prepared mustard - 2 tsp
- oregano - 1/4 tsp
- basil - 1/4 tsp
- shredded Mozzarella cheese - 2 c
- thinly sliced zucchini - 4 c
- can refrigerator crescent rolls - 8 oz
How to make italian zucchini pie:
Cook and stir zucchini and onion in margarine for 20 minutes. Stir in salt, pepper, basil and oregano. Cook until tender. Combine eggs and Mozzarella cheese. Stir into zucchini mixture.Separate crescent rolls in triangles. Place in ungreased 10-inch pie pan or square pan. Press over bottom and sides to form a crust. Spread crust with prepared mustard. Pour zucchini mixture into crust. Bake at 375° for 20 minutes. Let stand 10 minutes and serve.
