Hush puppy muffins
Ingredients/Components
- sugar - 1/2 tsp
- salt - 1 tsp
- boiling water - 1 c
- egg, beaten - 1 item
- margarine, melted - 1 Tbsp
- minced green onion - 3 Tbsp
- ground thyme - 1/2 tsp
- yellow cornmeal - 1 c
- cayenne pepper - 1/4 tsp
- dash of Tabasco - 1 item
How to make hush puppy muffins:
Preheat oven to 500°. Spray small cup muffin tin with nonstick vegetable coating. Mix dry ingredients, including onion, with a fork. Make a well in center and pour in the boiling water. Stir briskly. Stir in beaten egg, margarine and Tabasco. Spoon 2 tablespoons batter into each muffin cup. Bake 15 or 20 minutes or until golden brown on top. Makes a dozen small muffins.Note: For a spicier flavor, serve with margarine whipped with 1 teaspoon or more of Tabasco.
