Hummingbird cake with cream cheese icing
Ingredients/Components
- sugar - 2 c
- cinnamon - 1 tsp
- eggs - 3 item
- vanilla
- salt - 1 tsp
- chopped nuts - 1/2 c
- stick margarine - 1 item
- baking soda - 1 tsp
- all-purpose flour - 3 c
- cooking oil
- mashed bananas - 2 c
- box powdered sugar - 1 lb
- crushed pineapple, undrained - 1 can
- Pour batter into a greased and floured Bundt or tube pan
How to make hummingbird cake with cream cheese icing:
Mix all ingredients together in large mixing bowl with spoon. Pour batter into a greased and floured Bundt or tube pan. Bake at 325° for 1 1/2 hours. Cool in pan one hour before removing. Allow to cool completely and ice, if desired.Cream Cheese Icing:8 oz. cream cheese1 stick margarine1 tsp. vanilla1 lb. box powdered sugar Cream margarine and cheese. Add sugar and vanilla. Beat until smooth.Note: This cake could also be baked in three 9-inch layer pans. Bake only 30 minutes.
