  • sugar - 2 c
  • vanilla
  • chopped nuts - 1 c
  • soda - 1 tsp
  • eggs, beaten - 3 item
  • plain flour - 3 c
  • Wesson oil
  • softened margarine - 1/2 c
  • boxes powdered sugar - 2 oz
  • diced bananas - 2 c
  • small can crushed pineapple, do not drain - 1 item
  • Stir until dry ingredients are moistened

How to make hummingbird cake:

Combine dry ingredients in a large bowl; add eggs and oil. Stir until dry ingredients are moistened. Stir in vanilla, pineapple, 1/2 cup nuts and bananas. Pour into 3 well-greased and floured 9-inch cake pans. Bake at 350° for 25 to 30 minutes. Cool and frost; sprinkle with 1/2 cup nuts.Frosting:1 (8 oz.) pkg. softened cream cheese1/2 c. softened margarine2 tsp. vanilla2 (16 oz.) boxes powdered sugar Combine all ingredients; beat until light and fluffy.
