Ingredients/Components

  • all-purpose flour - 3 c
  • sugar - 2 c
  • salt - 1 tsp
  • soda - 1 tsp
  • cinnamon - 1 tsp
  • eggs, beaten - 3 item
  • oil
  • vanilla - 1/2 tsp
  • crushed pineapple - 8 oz
  • pecans - 2 c
  • bananas, mashed - 2 c
  • Add eggs and oil
  • melted butter - 1/4 c
  • powdered sugar - 2 c
  • lemon juice - 1 tsp

How to make hummingbird cake:

Combine dry ingredients in a large bowl. Add eggs and oil. Stir until moistened. Stir in vanilla, pineapple, 1 cup pecans and bananas. Put in three 9-inch pans. Bake at 350° for 25 to 30 minutes. Use Cream Cheese Icing and put 1 cup pecans on top and sides.Cream Cheese Icing:2 (3 oz.) pkg. cream cheese1/4 c. melted butter2 c. powdered sugar1 tsp. lemon juice Soften the cream cheese. Beat until fluffy. Beat in the butter, powdered sugar and lemon juice. Refrigerate cake.
