Ingredients/Components
- all-purpose flour - 3 c
- sugar - 2 c
- salt - 1 tsp
- soda - 1 tsp
- cinnamon - 1 tsp
- eggs, beaten - 3 item
- oil
- vanilla - 1/2 tsp
- crushed pineapple - 8 oz
- pecans - 2 c
- bananas, mashed - 2 c
- Add eggs and oil
- melted butter - 1/4 c
- powdered sugar - 2 c
- lemon juice - 1 tsp
How to make hummingbird cake:
Combine dry ingredients in a large bowl. Add eggs and oil. Stir until moistened. Stir in vanilla, pineapple, 1 cup pecans and bananas. Put in three 9-inch pans. Bake at 350° for 25 to 30 minutes. Use Cream Cheese Icing and put 1 cup pecans on top and sides.Cream Cheese Icing:2 (3 oz.) pkg. cream cheese1/4 c. melted butter2 c. powdered sugar1 tsp. lemon juice Soften the cream cheese.
