  • eggs - 4 item
  • flour - 3 c
  • oil - 1 Tbsp
  • tomato paste - 2 Tbsp
  • crushed garlic or 1 Tbsp

How to make homemade pasta:

Flavoring:1 Tbsp. crushed garlic or 1 Tbsp. crushed red pepper or 2 Tbsp. beets2 Tbsp. tomato paste To mix pasta in food processor: Insert steel blade in bowl. Place eggs, oil, flavoring and flour in bowl. Process until thoroughly blended (about 10 to 20 seconds). Once ball has formed on blade, let spin around bowl 10 to 15 seconds. Remove dough from bowl and dust lightly with flour. Cover with a bowl and let rest 30 minutes.

To roll and shape dough: Place half of the dough on a lightly floured surface, keeping remainder covered. Using a pasta machine, roll dough out until desired thickness, then cut to the desired width. Let pasta rest a few minutes before cooking.

To cook the pasta: Bring 6 quarts of water and 1 tablespoon salt and 1 tablespoon oil to a boil. Drop in pasta and cook until al dente (firm to the teeth). Do not overcook.
