Ingredients/Components

  • salt - 1/8 tsp
  • nutmeg - 1/8 tsp
  • raisins - 1/2 c
  • grated orange peel - 1/2 tsp
  • orange juice - 2 Tbsp
  • Ricotta cheese - 1/3 c
  • mini marshmallows - 1 c
  • medium banana, sliced - 1 item
  • shredded carrots 1 lb - 3 c

How to make health salad:

Combine first 4 ingredients. Stir together cheese, orange juice and peel, salt and nutmeg until smooth. Pour over carrot mixture and toss gently. Serves 4, about 185 calories per serving.
