Ingredients/Components

  • salt - 1/2 tsp
  • lemon juice - 1 Tbsp
  • salad oil - 1/2 c
  • white wine vinegar - 6 Tbsp
  • hard-cooked eggs, chopped - 2 item
  • chopped chives - 3 Tbsp
  • diced, cooked chicken or turkey
  • sliced bacon - 1 lb
  • large tomato, seeded and chopped - 1 item
  • large ripe avocado - 1 item
  • about 3 oz - 2/3 c
  • medium size head iceberg lettuce, thinly shredded - 1 item
  • each: garlic powder and freshly ground pepper - 1/8 tsp
  • watercress sprigs optional - 1 item

How to make cobb salad:

In wide frying pan over medium heat, cook bacon until crisp. Lift out, drain and crumble. Set aside. Pit, peel and dice avocado. Moisten avocado with lemon juice and set aside.

Place lettuce in a large, wide salad bowl. In medium size bowl, combine vinegar, salt, garlic powder, pepper, chives and oil. Mix until well blended. Pour dressing over lettuce and mix slightly until well coated. Arrange lettuce in an even layer in large wide salad bowl.

Place cheese in center of lettuce. Surround with wedge-shaped sections of bacon, avocado, tomato, chicken and eggs. Garnish with watercress, if desired. Serve immediately. Makes 4 servings.
