  • sugar - 1/3 c
  • butter - 2 Tbsp
  • cornstarch - 2 Tbsp
  • vinegar - 1/2 c
  • salt and pepper to taste - 1 item
  • beet juice - 1/2 c
  • sliced beets - 2 c

How to make harvard beets:

Heat cooked beets in double boiler. Mix sugar and cornstarch; add vinegar and juice. Pour over beets; add butter. Stir occasionally until mixture gets thick.
