Greek style salad
Ingredients/Components
- freshly ground pepper - 1/4 tsp
- red wine vinegar - 1/4 c
- lettuce leaves - 1 item
- medium tomatoes, cut into wedges - 2 item
- pitted ripe olives - 1 c
- Feta cheese, crumbled - 3/4 c
- medium cucumber, sliced - 1 item
- medium zucchini, cut into strips - 1 item
- medium size purple onion, thinly sliced and separated into rings - 1 item
- jar marinated artichoke hearts, undrained - 1 oz
How to make greek style salad:
Combine tomatoes, zucchini, cucumber, olives, onion and cheese in a large bowl, toss gently. Drain artichoke hearts, reserving marinade. Add artichokes to tomato mixture. Combine reserved marinade, vinegar and pepper and pour over tomato mixture. Toss. Cover and chill 8 hours. Drain; serve on lettuce.
