Sweet and sour cabbage
Ingredients/Components
- salt - 1/2 tsp
- dark brown sugar - 2 Tbsp
- freshly ground pepper - 1/4 tsp
- red wine vinegar - 2 Tbsp
- medium onion, thinly sliced - 1 item
- ground allspice - 1/8 tsp
- unsalted butter - 2 Tbsp
- golden raisins - 1 Tbsp
- thinly shredded 1/4-inch red cabbage about 1/4 medium - 3 c
- Granny Smith apple, peeled, cored and finely diced - 1 item
How to make sweet and sour cabbage:
Melt the butter in microwave-safe 2-quart glass casserole with a lid, about 1 minute. Stir in cabbage, apple, onion, vinegar, brown sugar, golden raisins, salt and allspice. Cover and microwave on High power for 8 to 10 minutes, stirring 4 times until the cabbage is very soft. Let stand, covered, for 2 minutes. Add freshly ground pepper; taste and adjust seasonings.
