Glazed pork
Ingredients/Components
- boneless smoked pork shoulder - 3 lb
- whole black peppercorns - 4 item
- whole cloves - 2 item
- bay leaf - 1 item
- apricot preserves - 1/3 c
- large carrots, sliced and cut diagonally 1/8-inch thick - 4 item
- sugar - 1/2 tsp
- 10 oz - 2 pkg
How to make glazed pork:
Place pork in a large pot or Dutch oven; cover with water. Add pepper, cloves and bay leaf. Bring to a boil; reduce heat and simmer 2 1/4 hours (about 45 minutes per pound) or until pork is tender. Remove from heat; let meat cool in water about 2 hours.Preheat oven to 375°. Remove meat from cooking liquid and place in a shallow roasting pan. Spread apricot preserves over top. Bake, uncovered, about 40 minutes.
Meanwhile, in 1-inch of boiling water, cook carrots with 1/2 teaspoon salt and sugar, 20 minutes, or until done; drain. Add 2 tablespoons margarine. At the same time, prepare spinach as package directs; drain. Dot with 4 tablespoons margarine.
Serve: Arrange spinach in center of platter. Cut pork into 1/2-inch slices and place on the spinach. Then place carrots around platter.
