German potato salad
Ingredients/Components
- sugar - 1 Tbsp
- salt - 1 tsp
- flour - 1 Tbsp
- hot water - 1/2 c
- pepper - 1/8 tsp
- chopped parsley - 2 Tbsp
- medium potatoes - 6 item
- small onion - 1/2 item
- hot vinegar - 1/2 c
- Sauce:6 sliced bacon, fried crisp
How to make german potato salad:
Sauce:6 sliced bacon, fried crisp1 Tbsp. flour1/2 c. hot water1/2 c. hot vinegar1 Tbsp. sugar1/2 small onion Scrub potatoes, cook until you can pierce them easily with a fork. Peel, slice and season with salt and pepper. Keep hot.Chop parsley and one half of small onion, add to potato mixture.
Sauce: Fry diced bacon until crispy, remove from grease, add one half of small chopped onion and saute. Stir in flour and cook stirring constantly a couple of minutes. Add hot water, vinegar and sugar, bring to a boil, stirring occasionally. Pour over potato mixture.
Make the day before for better flavor. Add bacon just before serving. Yields 5 or 6 servings.
