Ingredients/Components
- flour - 1 Tbsp
- water - 1/4 c
- dried apricots - 1 c
- raisins - 1 c
- pecans - 1 c
- grated orange peel - 2 Tbsp
- unflavored gelatin - 1 Tbsp
- rum flavoring optional - 1 tsp
How to make fruit bars:
Place water in a saucepan. Sprinkle gelatin over water. Allow gelatin to soften for 5 minutes. Stir over low heat to dissolve gelatin. Combine remaining ingredients in a large bowl. Place mixture into a blender, 1/3 at a time. Blend until mixture has a coarse texture, but contains not large chunks. Add blended ingredients to gelatin in saucepan; stir well. Line bottom and sides of an 8-inch square pan with wax paper. Spray wax paper with a nonstick spray. Spread mixture in pan. Cool completely in refrigerator until firm, about 2 to 3 hours. Cut into 24 bars. Store bars between layers of wax paper. Yields 24 bars.Exchanges: 1/2 fruit and 1/2 fat. Each serving contains 66 calories, 3 gm fat, 1 gm protein, 10 gm carbohydrate, 3 mg sodium, 0 cholesterol and 0.89 gm dietary fiber. Percent calories from fat: 43.
