Ingredients/Components

  • soft butter - 1/2 c
  • brown sugar - 1/4 c
  • flour - 1 c
  • chopped nuts - 1/2 c
  • coconut - 1/2 c
  • eggs - 3 item
  • plus 2 Tbsp - 1/2 c
  • lemon juice - 3 Tbsp
  • cream - 1 c

How to make frozen lemon crunch:

Blend the first 5 ingredients with hands until mixed. Spread in a 9 x 13-inch pan. Place in a 375° oven until golden brown; stir occasionally while browning. Reserve 3/4 cup for topping. Pat remainder into 10-inch pie tin. Cool. Beat egg yolks until light yellow. Gradually add 1/2 cup white sugar; continue beating until thick and light. Add lemon juice; beat. In separate bowl, beat egg whites until stiff, adding remaining white sugar. Whip cream; fold into egg white mixture. Fold in egg yolk mixture and pour into crust. Add topping and freeze. Yields 8 servings.
