Ingredients/Components

  • eggs - 2 item
  • salt - 1/2 tsp
  • flour - 1/2 c
  • oil - 4 6
  • pepper - 1/4 tsp
  • grated cheese - 1/2 c
  • corn meal - 1/2 c
  • medium green tomatoes, sliced - 3 item

How to make fried green tomatoes:

Note: Zucchini may be used instead of tomatoes.

Combine corn meal, cheese, salt and pepper in a shallow dish. Place flour on waxed paper. Beat eggs in another shallow dish. Dredge tomatoes in flour, shaking excess flour off. Dip in egg, then in corn meal mixture, lightly pressing on both sides. (At this point can be layered on wax paper and frozen.) Heat oil in skillet. Add layer of tomatoes. Fry on both sides until golden. Drain on paper towels.
