  • salt - 1 tsp
  • vegetable oil - 1 item
  • egg, beaten - 1 item
  • cornmeal - 1 c
  • pepper to taste - 1 item
  • small to medium catfish - 12 item
  • buttermilk, milk or water - 1 c

How to make fried catfish:

Fillet any catfish that are very large; wash and pat dry. Pepper lightly. Mix cornmeal and salt; combine egg and milk. Dip fish in egg mixture and then in cornmeal. Heat 1/2-inch oil in a heavy skillet to 370°. Fry fish about 5 minutes on each side until golden brown. Drain on paper towels and serve immediately. Serves 6.

Comment: The secret to good fried catfish is oil hot enough to turn the fish only once. If you do not have a deep fat thermometer, heat the oil until it just begins to smoke. Once you remove fish, do not add more until oil is again at 370°.
