Fresh cream of mushroom soup
Ingredients/Components
- half and half - 1 c
- milk - 1 c
- flour
- margarine - 4 Tbsp
- small onion, finely chopped - 1 item
- fresh mushrooms - 1/2 lb
- sherry optional - 1 Tbsp
- Accent
- chicken stock or broth - 3 c
How to make fresh cream of mushroom soup:
Clean mushrooms; chop stems finely and caps medium fine. Melt margarine in skillet. Saute onion until soft; add chopped mushrooms. Cook lightly 2 minutes; add chicken stock. Cover; simmer 15 minutes. Microwave white sauce with rest of margarine, flour, milk and cream. Stir into mushroom mixture. Add seasonings and sherry.Recipe categories: Soups & stews, Mushroom, Bisques/cream soups.
