  • salt - 1 tsp
  • water - 1 item
  • bay leaf - 1 item
  • salt and pepper to taste - 1 item
  • stalks celery - 6 item
  • cloves garlic - 2 item
  • medium onions - 2 item
  • thyme - 1 item
  • green pepper - 1 item
  • tomatoes - 1 qt
  • medium ham hock - 1 item
  • handful chopped parsley - 1 item
  • sliced smoked sausage - 1/2 1
  • each*
  • several pieces boneless chicken breast - 1 item

How to make french market soup:

*Black beans, red beans, navy beans, garbanzos, pinto beans, baby lima beans, lentils, barley, split peas and black-eyed peas.

Wash 2 cups bean mix. Drain. Add water to cover and 1 teaspoon salt. Soak overnight. Drain. Add 3 quarts water, ham hock, bay leaf and dash of thyme. Simmer 3 hours, covered. Add tomatoes, green pepper, onions, celery, garlic and salt and pepper to taste. Simmer 1 1/2 hours, uncovered. Add smoked sausage and chicken. Simmer until chicken is done. Ten minutes before serving, add parsley. Makes a big pot! Freezes well!
