French market soup
Ingredients/Components
- salt - 1 tsp
- water - 1 item
- bay leaf - 1 item
- salt and pepper to taste - 1 item
- stalks celery - 6 item
- cloves garlic - 2 item
- medium onions - 2 item
- thyme - 1 item
- green pepper - 1 item
- tomatoes - 1 qt
- medium ham hock - 1 item
- handful chopped parsley - 1 item
- sliced smoked sausage - 1/2 1
- each*
- several pieces boneless chicken breast - 1 item
How to make french market soup:
*Black beans, red beans, navy beans, garbanzos, pinto beans, baby lima beans, lentils, barley, split peas and black-eyed peas.Wash 2 cups bean mix. Drain. Add water to cover and 1 teaspoon salt. Soak overnight. Drain. Add 3 quarts water, ham hock, bay leaf and dash of thyme. Simmer 3 hours, covered. Add tomatoes, green pepper, onions, celery, garlic and salt and pepper to taste. Simmer 1 1/2 hours, uncovered. Add smoked sausage and chicken. Simmer until chicken is done. Ten minutes before serving, add parsley. Makes a big pot! Freezes well!
